  1. Mix eggs, milk, sugar, salt, vanilla, and cinnamon in a flat bottomed bowl and heat up a flat griddle to medium high heat.
  2. Melt a small amount of butter on the griddle, dredge the bread in the egg mixture, and place on griddle.
  3. Cook until golden brown on one side, flip, and do the same for the other size.
  4. Serve hot with maple syrup and a dash of cinnamon.
  5. You can experiment with the type of bread used in this recipe. Cinnamon swirl bread works great. So does apple cinnamon bread. Wheat and multi-grain breads tend to not work as well.
